The winery's history began in the 17th century when the estate was owned by a wealthy family called the Drouilles. The family built a grand château on the property, which still stands today and is a popular tourist attraction. In 1820, the estate was sold to a wealthy merchant named Mr. Castaing, who expanded the vineyards and improved the winemaking process. Under Castaing's ownership, Château Chasse-Spleen became a well-known brand and was sold in high-end restaurants throughout Europe.

In the 20th century, Château Chasse-Spleen changed hands several times and underwent a series of renovations and improvements. In 1976, the estate was purchased by the Taillan Group, a family-owned wine company that also owns other famous Bordeaux wineries such as Château Haut-Bages Libéral and Château Ferrière. Today, the winery is managed by the Taillan Group's third generation and continues to produce high-quality Bordeaux wines.

Château Chasse-Spleen is known for its red wines made from Cabernet Sauvignon, Merlot, and Petit Verdot grapes. The wines are known for their deep color, full body, and complex flavor profile. The winery produces several different wines, including the flagship Château Chasse-Spleen, which is a blend of Cabernet Sauvignon, Merlot, and Petit Verdot aged in oak barrels for 12-18 months. The wine has a rich aroma of black fruit, spices, and tobacco and a long finish with a smooth tannic structure.

Another recommended wine from Château Chasse-Spleen is the L'Héritage de Chasse-Spleen. This wine is a second label wine, meaning it is made from younger vines and aged for a shorter time than the flagship wine. Despite this, L'Héritage de Chasse-Spleen still maintains the high-quality standards of the winery and is a more affordable option for those looking to try Château Chasse-Spleen's wines.

In addition to these wines, Château Chasse-Spleen also produces a white wine called Château de Marbuzet Blanc. This wine is made from Sauvignon Blanc and Semillon grapes and is known for its fresh citrus flavors and crisp acidity.

To properly enjoy Château Chasse-Spleen's wines, it is recommended to decant the wine for at least 30 minutes before serving to allow the wine to breathe and the flavors to fully develop. The wine pairs well with red meat dishes, roasted vegetables, and strong cheeses.

Overall, Château Chasse-Spleen is a historic winery with a reputation for producing some of the best Bordeaux wines. Their wines are a great choice for those looking to experience the flavors and complexity of Bordeaux wine without breaking the bank.
